Veggie-Rich Recipe: Celery, Apple, and Grape Salad

This healthy, low-fat salad is easy to make and a great way for kids to get several servings of fruits and veggies. They’ll love how colorful it is, and you’ll love how good it is for them!

Celery, Apple, and Grape Salad

Ingredients
4 cups celery, washed and sliced on the diagonal into ¼-inch pieces
2 Granny Smith apples, washed, cored, halved, and sliced into ¼-inch pieces
1 pound red seedless grapes, washed, and cut in half lengthwise
6 tablespoons red wine vinegar
¼ cup canola oil
1 tablespoons Dijon mustard
salt and pepper to taste

 

Directions

1. In a mixing bowl, combine the celery, apples, and grapes.

2. In another mixing bowl, combine the vinegar, oil, and mustard and whisk together.

3. Pour the dressing over the salad ingredients and toss.

4. Add salt and pepper to taste and toss again.

5. Serve chilled.
